I love this book.

Everyone should read it.

This book, by Dr. Neal Barnard, will teach you how to lower your cholesterol, lower your blood pressure, reduce or eliminate your chance of heart disease and possibly even cure yourself from diabetes.  I love this book it truly could save your life.

A Vegan’s Christmas Wish List

Missing My Dad

I cannot believe that next week will be the second anniversary of my Dad’s death.  Over the last couple weeks he has been on my mind and yesterday all I wanted was my comfort food that he use to make me.  His specialties were waffles, that we had on the morning of any special occasion, grilled cheese, nachos and chocolate cake. Now don’t let me mislead you he did not have a special recipe or secret ingredient.  It was the secret ingredients of Betty Crocker and a few others.  But as Marie Berone from “Everbody Loves Raymond” would have said, “It was made with love.”

So today I had to do my best to fulfill my comfort food needs. I really wanted Nachos and Chocolate Cake.  My Dad’s nachos were always the tortilla chips or nacho cheese Doritos with spicy Velveeta cheese, green olives and salsa.  I went to Dandelion Communitea Cafe and found these amazing Nachos, the “Macho Libre.”

Then I moved onto my favorite bakery that I have mentioned before, Raphsodic.  Here I got my chocolate cake or as they call this cuppy cake, the “Feaxstess.” Yes their was yummy cream in the middle.

It was all so good.  Thank you to these two great restaurants for having awesome vegan food.  If you have not tried either of them I encourage you to do so.  You will not be disappointed.

The Secrets of People Who Never Get Sick

As I am reading the book, “The Secrets of People Who Never Get Sick,” my yougest daughter walks up and reads the title to herself and says, “Mom, I want to know secrets.”  Just as a child, we all want in on secrets.  In this very interesting book you get a peak at some of the usual and bizaar claims that people have of why they never get sick.

The author, Gene Stone, did a fantastic job of taking each of these secrets and filling the reader in with how some of these secrets came about. One such secret was the use of Garlic.  He gives the story of the person who daily uses garlic and then gives medical and statistical facts to agree or disagree with the secret of garlic.  I love that he looks at each secret from multiple directions.

I was encouraged that I already partake in several of the secrets, but then again I have not been sick in quite some time.  I would have to agree they work.  I too liked finding some of the activities that I already am involved in and learning more about there history and why it is so good for you, such as in the chapter on Yoga.

A few of the secrets have to do with food.  Those who hold the secret were kind enough to share some of their recipes with us.  As a vegan I just had to try the recipe from the chapter on plant based diets.  I was not disappointed.  The recipe was from Rip Esselstyn who co-wrote with Gene Stone the Engine 2 Diet.  A bit different, the recipe was for a Sweet Potato Lasagna (sorry, not sharing the recipe, you have to get the book).  Yum!  Of course I had to take a few pictures.

The Lasagna was topped with roma tomatoes and cashews, so good.

A very good recipe that I intend to make again.

I really enjoyed “The Secrets of People Who Never Get Sick,” and seeing what others do to stay healthy.  A general trend among those that shared there secrets were they all lived active lifestyles and overall ate a healthy diet.  Then of course was there secret they added on top.

A very interesting, well written book.   Their is so much more I would love to tell you about “The Secrets of People Who Never Get Sick,” but you would enjoy reading the book so much more. To order or learn more about the book go to  http://secretsofpeople.com/

Green Day Cafe

Today I went somewhere that I just had to share not only for the fabulous vegan options but the great healthy options.  It is the Green Day Cafe at Orlando Fashion Square Mall.  They had a variety of soups, 3 being vegan, wraps, salads and more.  I had the Holy Guacamole Wrap and Harvest and Wild Rice soup.  They were both fantastic.

What makes this place even more wonderful is that all the cups, bowls, spoons, etc are all compostable.  Next time you are in the colonial town area of Orlando I highly suggest stopping at the mall and trying this restaurant, especially if you need something fast.  And if there is anyone from Green Day Cafe that reads this can we please have one in Waterford…please.

Thanksgiving 2011

I hope you all had a fantastic Thanksgiving.

This year we had a very first complete vegan Thanksgiving, and it was amazing.  The food was so good we did not miss the usual centerpiece, the turkey.  Our turkey this year we actually adopted and is living at Farm Sanctuary (www.farmsanctuary.org ) in Watkins Glen, NY., her name is Victoria.

Before we began the cooking we headed out for our families 2nd Turkey Trot 5k.  I love this event.  It is such a great time getting to see friends and sharing one of my favorite activities with my family.

For our Thanksgiving meal we had lots of the usual’s, they were just made vegan.

We had Mashed Sweet potatoes with coconut, Pecan Crusted Seitan, Mashed potatoes, Stuffing, Macaroni and Cheese and of course cranberry sauce.

So what is some of this stuff and how did we make it vegan?

Seitan is a wheat protein that has a meaty texture.  It is very tasty and good for you.  You can usually find it in the “healthy section” of the produce department and it is kept refrigerated.  As for the recipe for the seitan and the sweet potatoes, I do not have it, my friend Taylor brought it.

  For the mashed potatoes all you have to do is change your butter to Willow Run Margarine or Earth Balance Butter (sometimes for some crazy reason, at least in Orange, Tx. these are not found in the butter section of a grocery store but again in the produce section with the health foods), they both taste no different than normal butter.  For the milk I just substituted with almond milk.

The stuffing is my favorite  so this had to be good.  I watched this great video on cooking a vegan thanksgiving meal on the Forks over Knives website.  You can see it at http://www.forksoverknives.com.  She made her stuffing with rice and I did not like that idea so I used all of her stuffing ingredients and substituted the rice with a vegan stuffing mix from whole foods.  It was amazing.

And then there was Dessert.

Forks Over Knives – Book

I just finished reading “Forks Over Knives”.  This is a great book based on the movie that has just been released.  It summarizes the basis of a whole foods plant based diet.  The book approaches the need for this diet based on health benefits, abuse in factory farms and the harm of the western diet on the environment.

Following the three chapters of benefits it takes you through how to make simple changes to your diet to take baby steps into a whole foods plant based diet, and there are many amazing looking recipes I cannot wait to try.  “Forks Over Knives” is written by T. Colin Campbell , PhD who wrote “The China Study” that I wrote about in a previous post, and also by Caldwell B. Esselstyn, Jr, MD.

This is a quick read that covers the basics, and introduces other great authors and their books.  I cannot wait to see the movie.  It is only in a few theaters across the country but should be on Netflix soon.  If you don’t read the book I want to encourage you to watch the movie.  I promise if you try a whole foods plant based diet you will feel so much better and you can be healed from so many diseases.

A Little More Vegan

Earlier this summer we went on an old fashion family road trip, Florida to Texas to Minnesota back to Texas (that is another story) and then home to Florida.  We drove a little over 5,500 miles.  I know it sounds crazy, but we had fun.

I knew before setting out I would not be going through the most vegan of areas in the country.  So I went prepared.  I had bars, cereal, smoothie mix, etc.  I was ready.  There will be more to come on some of the great food I did find along the way.

While driving through corn field after corn field, a minimum of 200 miles of corn fields, I was going back and forth between reading “Big Green Purse” and “Farm Sanctuary” to my husband (details on those to follow in future blogs too).  This was not because he asked me to, it was more of he had no choice.

As I mentioned in one of my first blogs, https://milesforacure.wordpress.com/2010/06/10/my-little-secret/ My original intention for becoming vegan was for health purposes.  After watching my Dad die of a rare disease, I wanted to do anything I could to avoid what he went through. There is lots of research that proves a vegan diet eliminates or minimizes most diseases by just not eating animal products.

Since then I have read lots about veganism and researched what happens to animals.  I use to think that animal activist were a little on the strange side and that everything in books and pamphlets were all extreme cases.

While traveling through Farm Country,America, I got to see first hand just a glimpse of what factory farming does to innocent animals.  We had just entered Iowa when we passed two trucks overstuffed with extremely large pigs.  As I looked over I saw cuts all over these pigs with blood running down them.  Just the thought of these animals being poked, prodded and stuffed into these trailers to the point of these injuries was so sad to see.  I opened my window and the pigs in the back of the truck were wailing in pain.  I had never cried for an animal other than losing a dog or cat, but after seeing the pigs I could not hold it in.  I just sat in the car and cried.  It was the same sadness I felt when I came across a show on TV that showed child prostitution in foreign countries.  In both cases I had this overwhelming need to help the helpless.

As a Christian, and having the conviction that God created all things, I have to come to the conclusion I could no longer support the cruelty that goes on in the factory farms in our country and worldwide. As an American I am shocked that on TV we see people punished for cruelty to dogs and other favored pets, but when farm animals are treated the same way it is completely legal and economics encourages this behavior.

So maybe I am becoming one of those crazy vegan animal activist, but I would not have it any other way.  If nothing else this trip made me a little more vegan.
